Hello and welcome to the creative station within my kitchen!

Here, I’m excited to share some of the crazy and cool dishes crafted by myself and the talented kitchen team at COMPÁS, my very own restaurant.

Each dish is born from experimentation, dedication and a stubborn drive to push the boundaries of what’s possible when creativity meets a passion for cooking.

Most of the photos were taken by the talented Lucho, though I’ve snapped a few myself—because, let’s face it, who can resist capturing their own creations? I bet even Frankenstein would’ve done the same if he had a camera.


Let’s start with the main dishes of the now and then (the ones that were always available on the menu):

A throwback to our first creative week, during which we created dishes inspired by classic literature, such as: The Divine Comedy, Twenty Thousand Leagues Under the Sea, The Little Prince, 1984, Dr. Jekyll and Mr. Hyde.

We went from books to movies, representing great films such as: Harry Potter, Titanic, Star Wars, Avengers, El Dorado and even Pulp Fiction! (Don’t worry they are just seasoned salts ;))

It didn’t stop there. We also experimented by transforming and ‘gourmetizing’ popular fast food dishes from Bolivia! Burgers were reimagined as monoliths, tacos became sweet desserts you could see through, and we even created a dish inspired by our traditional street fairs, capturing all the iconic flavors, like candied apples and more.

We ventured into reinventing international flavors, pairing German cuisine with carefully selected beers, and even hosted a special event for Mother’s Day featuring French-inspired dishes.

Of course, we couldn’t forget our roots. We put great effort into reinventing traditional dishes while incorporating regional ingredients to create something truly special.

We moved beyond physical locations and started drawing inspiration from special dates. December was filled with Christmas flavors, and for New Year’s Eve, we crafted a tasting menu that represented different traditions from around the world. Sadly, we don’t have photos of that event, but it was truly unforgettable!

Did you know that Leonardo da Vinci wrote a book about the cuisine and ingredients of his time? That week, we fully immersed ourselves in reading and learning about Italy as it was back then.
